With soaring prices of soybeans and electricity, the annual number of tofu store bankruptcies is increasing at a record high. Eight companies went bankrupt in the five months from January this year. The current record is 17 in 2014, but the pace is surpassing that. Tofu has a weak ability to pass on the price, and has been regarded as an "honor student in price" along with eggs and bean sprouts. The key to restoring sound management is whether or not a company can gain an understanding of the appropriate price.
